OK, just because it doesn't have an entry in a dictionary doesn't mean it's not a word. When I used to play Scrabble constantly, it was a given that suffixes and prefixes, if they made sense, could be added to words to make new words, which were still acceptable. My favorite way to make a new word (for the game): Add an -er to the end of nearly any verb, to form the word for someone who does that action. In much the same way, I'd say unbottle, and therefore, unbottling, could be a word. It's perhaps not the best word to use, depending on the context, since when a substance is in a bottle, the usual way to get the substance out is to pour, not unbottle. But it could work in an informal, metaphorical setting.
